Educational Project


5,500 students and seventy recipients of the 31 municipal schools, from one end to the other in the municipality of Paraty, already benefit from this project, which re-qualifies school meals throughout the region. With a five-week menu, the Program stands out for the inclusion of family farming products, with an honest and well-managed per capita cost, enriched by the guarantee of nutritional gain.


With 29 sponsors, it is a project that today involves teachers, coordinators and directors, in actions that develop in children the values ​​and principles under different aspects of the food culture of the region – from the pride of local producers and their products to the introduction of organic herbaria, carried out with whim and great enthusiasm for the children.


Among other initiatives, the Program works in the separation and reusing of garbage inside the kitchens of the nine coastal schools. And even communication is a part of the proposal, leading all students involved to participate in the production of an Eating Journal, printed information produced throughout the year and distributed widely in the city, during the days of the Folia Gastronômica.

One of Ana Bueno’s favorite subjects, the chef emphasizes that a differential of the Educational Program is the voluntary participation of patrons, “most of them cooks, who adopt a school and make weekly visits, to help the lunch makers to understand and apply the changes on the menu. In this process we end up combining health, food education, culture, environment, gastronomy, solidarity and the common good.”


Ana says that this idea was born in the Folia Gastronômica of 2014, with the involvement of two hundred students from nine public schools, writing their own recipe books for an exhibition during the party. In that year, all school-based lunch makers were invited to attend the classes of the great chefs for free during the event.
With a good dose of boldness and decisive pinches of creativity, the good idea became an Educational Program that ended up revolutionizing the lunch of students from 9 to 16 years old in Paraty.
